Travel to EU - asian wife on family visit visa in UK

My wife (I am British she is Asian married 18 months) is here on a family visit visa my mother is her sponsor. We want to visit other Eu countries for a holiday what documents do we need to do so.

Where do you want to go? Start by looking at the embassy website of the country you wish to visit.

What Documents do you need to provide ?
Marriage cert and both passports, sometimes they may stick on
extra demands which may be unlawful, it depends which Embassy you apply to.

"you must apply for visa in country where you reside, namely
your spouses home country"
Now this does not conform with the the EU law of providing every facility.
Member States shall grant your third country family members
every facility to obtain the necessary visas. Such visas shall be
issued free of charge as soon as possible and on the basis of an
accelerated procedure.
The EU freedom of movement laws allow you to apply for the
visa at the border, but the EU instructions to the airlines don't say this.
So there is a risk of being refused boarding because you don't have a visa
even you are entitled to apply for the visa at the other end.
This is how poorly rights are upheld.

It depends on her citizenship. If she is Japanese, for example, no visa is required.
