But I want to know what's the different inbetween Limited Leave to Remain and Indefinite Leave to remain

One is limited - ie there is a time limit on it. The other isn't - it is indefinite. If (heaven forbid!) your partnership were to break up before you have converted your present probationary leave to indefinite leave, then you may find yourself unable to continue to live and work in UK. I would imagine that VA are trying to insure themselves against that remote possibility...
