Ask your sponcers employer to give you a fresh letter and attach the previous copy plus the fresh original employers letter till to date.

At the time of your EEA family permit HO was satisfied on your family circumstances,Now at the time of RC you have to prove that there is no change in your circumstances since Famiy Permit was issued.So mention this as well.
