If somebody is being granted visa for specialised skills, shouldn't he be doing job in those areas only? I have an impression that if you are granted visa for some specialist skills (e.g. IT or some other), you have to work in those skills only to get an extension and produce appropriate documents@the time of extn. If I have being granted visa for my IT skills HO may reject my extension if I show earning from part-time job(e.g. restaurant etc.). Thats the whole point of highly skilled visas.

Hence, I think showing appropriate earning for the sake of earning may not suffice.
This used to be the belief in the early days of HSMP. However it wasnt an objective measure of being highly skilled. Who is to say what your job was in your country of origin is going to be called the same thing in the UK. Thus they gauged you on income. I do agree the spirit is violated if yo go work in a restaurant as a waiter but then you probably wouldn't make the requisite amount for an extension so I wouldn't get hung up on if you are doing something else than what you were doing when you applied. I would focus on what is needed for the extension or the next visa level such as ILR.
