different employer, new COS. what happens with previous COS?

I might need your help again, Manci (or any powers-that-be of immigration laws)

Started with my new employer as of recent. I was told by RCN (my union) to tell my previous employer to cancel my previous COS, which I have, on two occasions. One, no reply. The second instance, someone told me that once I have a new one, it automatically cancels the previous one. Do I need to get worried?

What happens with the previous COS when you have a new one? Do I need to do anything?

Please enlighten me.

that is correct, your previous employer would have notified the HO of the termination of your employment. You don't need to do anything in this regard.
