I have got my HSMP approval and am planning to go for EC but I do not want to enter the UK till early JAN 2005 I was wondering if at a later stage would affect my ILR application ? I wanted to know what conditions I need to meet before I get an ILR.

can I request them to stamp a later day say some where mid of Jan.

Also would a 2 week hotel booking be sufficient as a proof of accomodation

i think you can ask for any date within 3 months of your HSMP approval, however even if you got EC today your ILR 'clock' only starts the day you actually enter the UK.
I m sure your 2 week booking will be sufficient if it is backed up with adequate plans of what you are going to do after the 2weeks.
