Thank so much for that highly informative conversation! We face a similar situation with my girlfriend. I am a Polish citizen and Talia is an American citizen, we currently both live in the UK. I have a stable job here (since Sep-2017) and Talia is on the student's visa (T-3). We are together for more than 3 years but we don't have mutual house bills for the last 2 years. We rent a flat together only since Sep-2017. Before we have been travelling a lot (8 months) and lived in Panama where my former company provided us with accommodation (not on our names unfortunately)

We have started preparing the documents for the Residency Card (unmarried partner) but we have to improvise to prove 2 year-long relationship. So we have prepared the following documents:

- confirmation letters from our parents
- confirmation letters from our flatmates (we lived apart for 8 months)
- confirmation letter from my company in Panama (covering 9 months)
- pictures and blog posts from our trip, letters from people we have traveled with
- employee letter from my current company

Can those documents be considered legal proofs or is it not serious enough? Talia's visa is good until September 2018, so there is still a bit of time to organize it well. However, the more I read about the process the more I start to wonder - should we go through the path of Residence Card and then un-married partner visa or should we just marry in the UK and get a family member visa?
